After years of cooking across America, and trying cuisine all around the world, life has led back home to the heart of Texas. Along the way I stumbled into a hobby that turned into a passion, and now has become this business. Having been a bit "rebellious" in my youth, and in combination with my Dad always telling me “find what you love doing, and make that your living”, I had no other choice. I had to make my mark, and I had to do it my way. The inception began with a simple saucisson sec I dried in my handmade curing chamber in the back of a laundry room in a bistro I was cooking at. After that first foray into the world of dry cured meats I never looked back. And so began this labor of love to bring to you the finest in French charcuterie and Italian salumis.
Now having been in business for a few years, we have expanded into all things Charcuterie related. We now offer pickles, cheeses, mustard, seasonings, sauces, and more to come. If there is an accoutrement we enjoy making, we will bring the best and most unique version to your table. Being a small business, and enjoying the constant rotation of seasonality, you will see many items come and go throughout the year. Guaranteed to please a wide array of tastes from the pickiest of eaters to the most refined of palates. You will be able to taste the love and hard work in everything we do.
The origin of the name “Moss Rose” dates back to my great grandfather, Mike Attas, a Greek immigrant who came here in the early 1900’s and even fought for his new home in WWI. After the war, he began to live the American Dream. Becoming a restauranteur, he opened several diners in and around Temple, TX. The most well known being The Moss Rose Café. Being only a third generation immigrant, family and community played a central role in my upbringing and they now play an equal role in my products. From my Mom Deborah, my brother Jake, to friends near and far, they have all had a hand in making this business a dream come true. From our humble family business, we proudly present to you: The Moss Rose Company. A blending of old world traditions with modern techniques. Made by hand, by family, and with the support of our community.
